I grew up on this dish. It’s a staple in most Latin households, and every country and family has their own version. In Peru, the rice is always simmered in a vibrant green sauce that’s full of cilantro and hot pepper—it’s delicious and one of the signature flavours of my childhood.

I haven’t had arroz con pollo in years because I don’t eat meat, so I decided to recreate it by swapping the chicken for mushrooms. As soon as I took a bite, I was instantly hit with the nostalgia. It’s one of those dishes that takes me way back, and if you grew up on arroz con pollo too but no longer eat meat, I hope this does the same for you. And if you didn’t, then I really think you should give this a try anyways. It’s a classic and I think everyone must make it at least once!
