

Another recipe to add to this series, and this one was my favourite as a kid. SO comforting and nostalgic for me. This is Arroz Tapado, which is essentially a savoury, spicy, delicious meat mixture layered with rice and turned onto a plate. It’s typically served with a fried egg and plantains and it is the perfect dish in my opinion. Absolutely amazing.
To make this vegetarian I’m using beyond meat, and it’s plant-based aside from the fried egg on top, which you could of course omit and just serve as is, it’ll still be amazing. I’m so glad that this series is making me rediscover dishes from my childhood that I honestly kind of forget about over the years. This one’s really special to me and I hope you love it as much as I do!
