Welcome back to In Season, the series where I share recipes using in season produce! This one is soooo quick and easy, and it makes use of spring produce like peas, herbs, green onions and citrus! Bonus if you top your toast with crunchy spring veggies of choice, I personally love radish slices. You can totally use frozen peas, which would technically defeat the purpose of cooking with in season produce but whateverrr, I won’t tell anyone. Frozen peas are so convenient and freezing veggies seals in their freshness. But if you do get your hands on some fresh spring peas, even better!
This spread is full of fibre and protein, perfect for a savoury breakfast or quick lunch. The combo of the savoury green onion with the refreshing mint and bright lemon is sooo unique, I love it. I’ve also been struggling with avocados lately—they turn brown in 2.5 seconds—so this spread is a great alternative. I love to use it as a veggie dip for snacking too.
Edamame & Pea Toasties


makes around 1.5 cups of spread
1 cup frozen peas, thawed (or fresh peas, boiled for 2 minutes and then blanch in ice water)
1 cup frozen shelled edamame, thawed
2 green onions, roughly chopped
3 stems mint, leaves only
1/3 cup tahini
1 tbsp nutritional yeast
Zest half lemon
Juice of 1/2-3/4 lemon
1/2 tsp salt
2 tbsps olive oil
1. Add everything to a food processor and blend until smooth and spreadable. Taste for salt and acidity and adjust to taste, adding more lemon or salt if needed.


2. Spread on toast and top with sliced radish, fried egg, herbs, veg of choice, and/or a drizzle of olive oil. Enjoy!
