Well what do you know, another bean recipe. I will never get enough. And I have to make a version for every season, so here is a late summer edition using one of my favourite vegetables (technically a fruit, of course): eggplant!
I feel like a lot of people have a problem with eggplant, maybe it has something to do with the texture. I’ll admit I wasn’t always a fan, it is a bit of a strange one. But once you get a hang on how to cook it properly, it can truly be delicious. I love it in stews, curries and now in beans! Plus the eggplant miso combo is elite and you must try it if you haven’t already. These are creamy, umami and the eggplant adds a subtle sweetness and unique flavour that cannot be replicated by anything else.
