

Whoops I’m a bit late with this one but better late than never. And this one is worth the wait, trust me. Caramelized lemon is my new favourite so expect to see more of it around here (I actually filmed a recipe with it this morning). Lemon really mellows out when fried in olive oil, plus it infuses the oil with delicious citrusy flavour. Also, leeks and lemon are the perfect pair, but we already knew that. Leeks add that intense savoury component and lemon adds tartness to balance everything out.
Caramelized lemon may sound kind of complicated but I promise this could not be easier. It all comes together in one pot and the end result is savoury, bright and perfectly creamy. So great for summer when most of us want to be spending time outside and not hours cooking.
