I’m all about full meal salads lately, which means salads that truly fill me up and cover my nutritional bases. This Peanut Gochujang Salad w/ Crispy Tofu fits the criteria and incorporates some of my favourite flavour profiles and staple ingredients. And the dressing is SO FLAVOURFUL, I’m thinking of adding it to tofu bowls and even using it in soup broths, how good does a peanut gochujang noodle soup sound??
