As a food creator, one of my biggest fears is suddenly developing a bunch of food intolerances and not being able to enjoy the food I make, and that’s kind of what’s happened recently. I’ve been struggling with some health issues this winter, namely psoriasis and generally out of whack gut health, so food has been a bit of a struggle. At first, I convinced myself that it couldn’t have been the culprit because 1) I would say I’m a relatively healthy eater and 2) I did not want big changes in my diet to affect the recipes I was developing and the content I could put out. The purpose of this page has never been to preach any sort of diet, but rather to share recipes that I make and love myself.
But once my flare ups got bad enough, I decided to consult a naturopath, who put me on a very strict diet for the month to reset my gut and help lower inflammation. It’s been a little over a week now and honestly, it seems to be working, which means I may have a few food triggers/intolerances that I have to get to the bottom of. Ugh sad (fingers crossed it’s not gluten). I think the best case scenario is that I heal my gut and am able to process more foods better than before. That’s really the goal here and I’ll have to work slowly with my naturopath to re-introduce different foods and monitor symptoms.
For now I am trying to see this as an opportunity to change my habits around food: like making sure I actually eat 3 full meals a day at reasonable times (I tend to get lazy with lunch or eat dinner way too late) and making sure my meals have a good balance of protein, fat and fibre, not just carbs lol. And dang am I eating more vegetables. Like so many. I know this is only temporary and I’ll be back to eating my normal diet in no time, but I just really want some noodles right about now. For the time being, I wanted to share the recipes that I’m making on my limited diet because I’m still making sure my meals are tasty and interesting!
On to the recipe…
One of those recipes is this Protein & Greens soup, which is not only delicious but also so nourishing and full of all the goodies that you want to be putting into your body. The protein comes from both green peas and firm tofu, and spinach enhances the green factor and nutrition. It’s also full of savoury flavour from sautéed leeks and made perfectly creamy by the full fat coconut milk. Really the perfect soup in my books.
