Silken Tofu Overnight Oats

Why have I never done this before! I just moved and while packing I realized that I am a total pantry hoarder; I have way too many random jars of grains, nuts, beans, and other miscellaneous items that could be put to good use! So to remedy this, I’m starting a new series where I work through all of the ingredients in my pantry before buying anything new. And please, hold me to it because I need the accountability, I’m way too tempted in the middle isles of the grocery store. This is inspired by Justine Doiron who did the same recently. I loved watching how creative she got with recipes and it makes sense because creativity is born out of constraints! It goes to show that you can do a ton of things with something as simple as almond flour. Who knew.
Yesterday I pulled silken tofu and a big bag of oats (there’s more where that came from) out of my pantry and thought it would be a good idea to blend the tofu into the wet mixture and soak the oats in it overnight along with some chia seeds. The results were the most perfectly creamy overnight oats that are also high in protein thanks to the tofu. I also blended some raspberries in there to make them pink, duh.
Silken Tofu Overnight Oats


makes 2 servings
1 cup raspberries, thawed in the microwave
1 309g (10.9oz) block silken tofu
4 tbsps maple syrup
1.5 cups almond/oat/soy milk
splash vanilla extract (measure w/ your heart)
small pinch salt
1 cup rolled oats, divided
6 tbsps chia seeds, divided
2 tbsps coconut shreds, divided (optional)
Place 1/2 of the thawed raspberries, silken tofu, maple syrup, milk, vanilla and salt in a tall container (if using an immersion blender) or a blender container. Blend until completely smooth.
These will fit into 2 16oz jars. To each jar, add 1/2 cup oats, 3 tbsps chia seeds and 1 tbsp coconut shreds. Stir the dry ingredients together. Then evenly divide the silken tofu mixture between the jars. Stir to combine, making sure that no oats or chia seeds are stuck at the bottom.


Mash the remaining berries with the back of a spoon and spread over the top of the oats. Cover and place in the fridge overnight. In the morning, pull out a jar and enjoy on its own, with some nut butter or toppings of your choice!
So easy! I am so excited for this series because I need to free up some more pantry space and this will force me to get creative. I’ll see you back here soon!
