Tomato & egg stir fry is one of my favourite Chinese dishes and while it’s typically served with rice, it’s also amazing over noodles—especially some chewy udon—so that’s exactly what I did. This recipe strays from the traditional tomato egg stir fry because I’ve added a few more ingredients for extra umami and sauciness. So satisfying and it only take about 15 minutes to make! The perfect noodle recipe for one.
